VANILLA CAKES

Ingredients:

  • 110g unsalted butter, softened
  • 165 caster sugar
  • 2 eggs
  • 1 tsp vanilla paste
  • 160g plain flour
  • ⅔ tsp baking powder
  • ¼ tsp sea salt
  • ⅓ cup buttermilk
  • Whipped cream & raspberries, for assembly

Method:

1. Preheat the oven to 180 C and line a 9 x 13” baking pan.

2. Combine the flour, baking powder and salt in a medium bowl and set aside.

3. In a stand mixer fitted with paddle attachment, beat the butter and sugar until light and fluffy.

4. Add the eggs, one at a time, beating well between each addition. Beat in the vanilla.

5. On a low speed, mix in a third of the dry ingredients until just combined, then follow with half the buttermilk.

6. Continue alternating the wet and dry ingredients until they are just combined.

7. Spread the mixture evenly into the pan.

8. Bake for 30 minutes, until the cakes spring back when pressed in the centre.

9. Allow cooling before using a heart-shaped cookie cutter to cut out love hearts.

10. To assemble, pipe whipped cream on one cake heart, and top with a second heart. Finish with a raspberry.

CHOCOLATE HAZELNUT CAKES

Ingredients:

  • 250g dark chocolate, chopped
  • 120g unsalted butter
  • 65g sugar
  • 4 eggs, separated
  • 2 tbsp plain flour
  • Whipped cream, Nutella & hazelnuts, for serving

Method:

1. Preheat the oven to 180 C and line a 9 X 13” tin with baking paper.

2. Place the chocolate and butter in a heatproof bowl over a pot of simmering water.

3. Heat, stirring occasionally until the mixture is melted and smooth.

4. Take the bowl off the heat. Whisk in half the sugar, followed by the egg yolks. Then fold in the flour.

5. Using an electric mixer, whisk the egg whites with the salt until they form soft peaks. Still whisking, pour in the other half of the sugar and keep whisking on high speed until the whites form firm peaks.

6. Fold a third of the meringue into the chocolate mixture to lighten it. Then gently fold in the remaining whites until smooth and combined.

7. Pour the batter into the prepared tin and spread out evenly.

8. Bake for 15 minutes, until the cake feels just set in the middle.

9. Allow cooling completely before using a heart-shaped cookie cutter to cut out love hearts.

10. Fold Nutella into the whipped cream, to taste.

11. Pipe dots of Nutella cream onto one heart cake. Top with a second cake. Finish with a hazelnut.

BANANA CARAMEL CAKE

Ingredients:

  • 2 eggs
  • 1 cup caster sugar
  • 2 tbsp brown sugar
  • ½ cup vegetable oil
  • 1⅓ cups ripe, mashed bananas
  • 2 tbsp Greek yoghurt
  • 1 tsp vanilla extract
  • 1½ cups plain flour
  • 1 tsp baking soda
  • Caramel sauce & berries, to serve

Method:

1. Preheat the oven to 160 C. Line a 9 x 13” inch pan with baking paper.

2. Using a stand mixer, whisk the egg and both sugars together until pale and thick.

3. With the mixer beating on a medium speed, slowly drizzle in the oil until it is all incorporated.

4. Remove the bowl from the mixer and fold in the bananas, yogurt and vanilla.

5. Sift in the flour, baking soda, cinnamon and salt and fold in gently.

6. Pour the mixture into the prepared tin and bake for 35-40 minutes, until a skewer inserted into the centre comes out clean.

7. Allow cooling before using a heart-shaped cutter to cut out love heart cakes.

8. Drizzle with caramel sauce and top with a berry to serve.
